- Sweet corn 6 ears
- Chicken stock 1 cup
- Butter (Salted) 8 tablespoons
- Heavy cream (optional) 2 tablespoons
- Cajun seasoning (unsalted blend) 1 teaspoon
- Smoked paprika ¼ teaspoon
- Cayenne ⅛ teaspoon
- Kosher salt to taste
- Black pepper to taste
Using a large bowl, remove all the corn kernels from the cob by scraping the cobs to extract any remaining corn milk.
Melt the butter, In a large cast iron skillet.
Add Cajun seasoning and chicken stock and stir until fully incorporated.
Add the corn kernels, and bring the mixture to a steady simmer. and add a dash of salt and pepper for seasoning.
Fry the corn until the majority of the liquid is absorbed, stirring frequently. To taste add salt and pepper.
If preferred, add 2 tablespoons of cream to the mixture towards the end and mix until combined.
Serve immediately and enjoy!
