- White vinegar 1 cup
- Apple cider vinegar 1 cup
- Garlic 6 cloves
- Large onion 1
- Large tomatoes 2
- Salt to taste

Begin by wearing gloves. Carefully chop the Carolina Reaper peppers, discarding the seeds.
Chop the onion, tomatoes, and garlic.
In your large pot, heat the olive oil, then add the chopped ingredients. Sauté for about five minutes until the onions are translucent.
Add both types of vinegar and salt, then bring the mixture to a simmer.
Let it simmer for 20-30 minutes until the peppers are tender.
Transfer the mixture to your food processor or blender and blend until smooth.
Strain the sauce using a sieve or cheesecloth to remove any remaining chunks, then let it cool.
