Ingredients
  

  • Carolina Reaper peppers 15
  • White vinegar 1 cup
  • Apple cider vinegar 1 cup
  • Garlic 6 cloves
  • Large onion 1
  • Large tomatoes 2
  • Salt to taste
  • Olive oil 1 tablespoon

Instructions
 

  • Begin by wearing gloves. Carefully chop the Carolina Reaper peppers, discarding the seeds. 
  • Chop the onion, tomatoes, and garlic.
  • In your large pot, heat the olive oil, then add the chopped ingredients. Sauté for about five minutes until the onions are translucent.
  • Add both types of vinegar and salt, then bring the mixture to a simmer.
  • Let it simmer for 20-30 minutes until the peppers are tender.
  • Transfer the mixture to your food processor or blender and blend until smooth.
  • Strain the sauce using a sieve or cheesecloth to remove any remaining chunks, then let it cool.
  • Once cooled, bottle up your Carolina Reaper Hot Sauce and store it in the refrigerator.
