Ingredients
  

  • Crab claws 6
  • Chilli garlic sauce 4 tablespoons
  • Shaoxing wine 2 tablespoons
  • Chilli oil, with sediment 1 tablespoon
  • Rice vinegar 1 teaspoon

For Serving:

  • Spring onions (green part)
  • Lemon wedges (optional)

Instructions
 

  • Get your barbecue ready for direct cooking by removing the grate and cleaning the surface of any debris or grease buildup.
  • Place the crab claws on the barbecue set up for direct cooking and cook for 4 to 5 minutes per side, adjusting the cooking time according to their size.
  • Allow the crab claws to cool for a few minutes, then gently crack them.
  • Whisk together the remaining ingredients in a small bowl, except for the spring onion and lemon wedges. Transfer the mixture to a saucepan and cook over low heat until it begins to simmer.
  • Drizzle the sauce over the crab claws and toss gently to coat.
  • As a garnish, sprinkle some finely chopped spring onion (green part) on top with lemon wedges before serving.
