Ingredients
  

  • Self-rising flour 1 ¼ cups
  • Sugar ½ cup
  • Butter (unsalted, melted) ½ cup
  • Yellow cornmeal ¾ cup
  • Buttermilk ¾ cup
  • Honey 2 tablespoons
  • Eggs 2

Instructions
 

  • To prepare your muffin pan, apply a thin layer of butter to each of the 12 cups. Then, preheat your oven to 350 degrees Fahrenheit.
  • Grab a big bowl, and add in the flour, cornmeal, and sugar.
  • Get a separate bowl and crack in the eggs. Beat them well using a whisk until they are smooth and even.
  • Next, add in the buttermilk and honey, and continue whisking until everything is fully combined.
  • Pour the buttermilk mixture into the flour and stir until just combined.
  • Stir the ingredients together until everything is fully combined.
  • Spoon the mixture into the muffin tray, filling them about three-quarters of the way up.
  • Place the muffin tray in the preheated oven, and let the muffins bake at 350 degrees Fahrenheit for approximately 20 minutes, or until the tops turn a light golden brown color.
  • Once your muffins are fully cooked, take the muffin tray out of the oven.
  • Serve them while they're still warm and enjoy your freshly baked treats! You did it!
