Ingredients
  

  • Navy beans 1 pound
  • Bacon (cooked) 3 oz
  • Brown sugar ΒΌ cup
  • Baking soda 1 teaspoon
  • Bay leaf 1 pc
  • Onion (finely chopped) 1 pc
  • Water to cover
  • Salt and pepper to taste

Instructions
 

  • Bring water to a boil in a saucepan and add baking soda to it until it dissolves.
  • Add the navy beans to the boiling baking soda water and let them cook for 10 minutes.
  • Allow the navy beans to steep overnight by turning off the heat, placing a lid on the saucepan, and letting the beans rest in the water.
  • Get an ovenproof pot ready and preheat the oven to 300 degrees. Rinse the navy beans well and transfer them to the pot.
  • Add in the remaining ingredients and stir until well combined.
  • Cover the beans with enough water so that they are submerged.
  • Cover the pot tightly with a lid and bake in the preheated oven for 5-6 hours, or until the beans are tender and the liquid has thickened to the desired consistency.
  • Make sure to check on the mixture every hour, stirring it and adding water as needed to keep the beans covered. Serve hot and enjoy!

Notes

  • In case you intend to store your baked beans for an extended period, it's worth noting that adding a few drops of lemon juice, vinegar, or wine can assist in preserving their freshness while also making them softer and enhancing their texture.
