Ingredients

  • All-purpose flour 2 ½ cups
  • Milk chocolate chunks 1 ½ cups
  • Granulated sugar 1 cup
  • Margarine (softened) ½ cup
  • Salted butter (softened) ½ cup
  • Brown sugar ½ cup
  • Light corn syrup 2 tablespoons
  • Vanilla extract 1 teaspoon
  • Salt ½ teaspoon
  • Baking soda ½ teaspoon
  • Egg 1

Instructions

  • Preheat your oven to 350°F (175°C).
  • Prepare your baking sheet by lining it with parchment paper or a silicone baking mat. Leave it aside for later.
  • In a mixing bowl, blend together the butter, sugar, and margarine until the mixture is creamy and smooth using an electric mixer or a stand mixer.
  • After scraping the sides of the bowl, add the corn syrup, vanilla extract, and egg. Mix thoroughly until well combined.
  • Stir in the baking soda, flour, and salt until just combined. Stir in the chocolate chips until evenly distributed.
  • Take about 2 ½ tbsps of the dough and shape it into a ball using your hands. Use two scoops from a #50 scoop for each cookie. Then, place the balls on the baking sheet that you prepared earlier.
  • Keep repeating this process until all of the cookie dough is used.
  • Bake the cookies in a preheated oven at 350° for 10-12 minutes or until the edges turn a light golden brown and the cookies spread out and flatten. Take out of the oven when done.
  • After removing the cookies from the oven, leave them on the baking sheet for 5 minutes to cool before transferring them to a wire rack.
  • Take a bite of these amazing homemade Insomnia Cookies and be transported to cookie heaven!
