Blend together the banana, rum, vanilla, and yogurt then add the flour mixture and beat at low speed just until it is just moist. Finally, stir in ½ cup of coconut.
Prepare a 9 x 5-inch loaf pan by coating it with cooking spray, then spoon the batter into the pan. Then, sprinkle 1 tablespoon of coconut over the batter.
Place the loaf pan in an oven preheated to 350° and bake for 1 hour or bake until a wooden pick inserted into the center emerges clean.
Allow the loaf to cool in the pan on a wire rack for 10 minutes, then remove it from the pan.
