Ingredients
  

  • All-purpose flour 2 cups
  • Mashed ripe banana 1 ½ cups
  • Granulated sugar 1 cup
  • Flaked sweetened coconut ½ cup
  • Powdered sugar ½ cup
  • Butter softened ¼ cup
  • Plain low-fat yogurt ¼ cup
  • Dark rum 3 tablespoons
  • Lemon juice 1 ½ tablespoons
  • Flaked sweetened coconut 1 tablespoon
  • Vanilla extract ½ teaspoon
  • Salt ½ teaspoon
  • Baking soda ¾ teaspoon
  • Large Eggs 2
  • Cooking spray

Instructions
 

  • To start baking, ensure that your oven is preheated to 350°F.
  • To measure the flour, use a dry measuring cup and lightly spoon the flour into it, leveling it off with a knife. After that, mix the flour, baking soda, and salt together and stir with a whisk.
  • Beat butter and granulated sugar together in a large bowl using a mixer on medium speed until the mixture is well blended. Then, add the eggs one at a time, making sure to beat well after each addition.
  • Blend together the banana, rum, vanilla, and yogurt then add the flour mixture and beat at low speed just until it is just moist. Finally, stir in ½ cup of coconut.
  • Prepare a 9 x 5-inch loaf pan by coating it with cooking spray, then spoon the batter into the pan. Then, sprinkle 1 tablespoon of coconut over the batter.
  • Place the loaf pan in an oven preheated to 350° and bake for 1 hour or bake until a wooden pick inserted into the center emerges clean.
  • Allow the loaf to cool in the pan on a wire rack for 10 minutes, then remove it from the pan.
  • Mix together the powdered sugar and juice using a whisk, then drizzle the glaze over the warm bread. Let the bread cool completely on a wire rack and then enjoy your delicious Jamaican banana bread!
