Ingredients
  

  • Chicken parts (legs, breasts, or a combination) 1.5 lbs
  • Large carrots (peeled and chopped) 2
  • Celery (chopped) 2 stalks
  • Large onion (finely chopped) 1
  • Garlic cloves (minced) 3
  • Bonnet pepper (optional, for heat) 1 scotch
  • Fresh thyme 2 sprigs
  • Allspice 1 teaspoon
  • Diced pumpkin or squash 1 cup
  • Sweet potato (peeled and chopped) 1 large
  • Chayote (cho-cho), peeled and chopped (optional) 1
  • Yellow yam (peeled and chopped) 1 cup
  • Chicken broth 6 cups
  • Chicken noodle soup mix 1 pack
  • Vegetable oil 1 tablespoon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Begin your Jamaican Chicken Soup Recipe by heating oil in a large soup pot over medium heat. Add the chicken parts and brown them slightly on all sides.
  • Next, add the chopped onion, garlic, carrots, and celery to the pot. Keep cooking these ingredients until the onions reach a see-through quality.
  • Now, add the Scotch Bonnet pepper (if using), thyme, allspice, chicken broth, and soup mix. Blend thoroughly, then elevate the heat until your concoction starts bubbling.
  • As soon as it's boiling, dial down the heat to a mild setting and allow the soup to slowly bubble for a rough duration of 30 minutes.
  • After 30 minutes, add the pumpkin, sweet potato, chayote (if using), and yellow yam to the soup.
  • Mix thoroughly, then shield the pot with its lid and let the soup maintain its gentle simmer for another half an hour, or until all root vegetables reach a soft consistency.
  • Season the soup with a sprinkle of salt and a dusting of pepper as per your taste preference.
  • Serve the soup hot, garnished with fresh parsley.
