Preheat your oven to 350°F (175°C). Grease and flour your loaf pans.
Start with a big bowl and mix your flour, salt, baking soda, baking powder, cinnamon, and nutmeg together.
Take another bowl and combine your sugar, vegetable oil, eggs, pumpkin, water, and vanilla extract. Make sure to mix it really well.
Next, slowly add your bowl of dry stuff to the bowl of wet stuff. Stir it around just until everything's mixed in.
Now, pour your batter into the two loaf pans. Try to split it evenly.
Put your pans in the oven and bake for about 60 to 70 minutes. You'll know it's done when you can stick a toothpick in the middle and it comes out clean.
After you take it out of the oven, let it cool in the pans for about 10 minutes. Then, move them to a wire rack so they can cool down all the way.
