  • Measuring cups and spoons
  • Cutting Board
  • Chef's knife
  • Skimmer or slotted spoon

Ingredients

  • Boneless chicken breasts or thighs 1.5 lbs
  • Turkey breast, cut into chunks 2 lbs
  • Chopped onions 1 cup
  • Chopped bell peppers 1 cup
  • Garlic cloves, minced 3
  • Diced tomatoes (14.5-ounce) 1 can
  • Chicken broth 4 cups
  • Corn kernels (fresh or frozen) 2 cups
  • Baby lima beans 1 cup
  • Large potato, diced 1
  • Olive oil 2 tablespoons
  • Paprika 1 teaspoon
  • Oregano 1 teaspoon
  • Salt and pepper to taste
  • Hot sauce (optional) 1 tablespoon

Instructions

  • Heat the Pot: Begin by heating the olive oil in a sizable Dutch oven or stockpot over a medium flame.
  • Brown the Meats: Add the chicken and turkey pieces to the pot. Brown them on all sides, then remove them and set them aside.
  • Sauté Vegetables: In the same pot, add the onions, bell peppers, and garlic. Sauté until softened.
  • Return Meats and Add Broth: Place the browned chicken and turkey back into the pot. Add the chicken broth.
  • Add Tomatoes and Spices: Add the can of diced tomatoes, salt, pepper, paprika, and oregano.
  • Simmer: Cover and allow the stew to simmer for about 1 hour.
  • Add Remaining Ingredients: Stir in the corn, lima beans, and diced potato. Continue to simmer until vegetables are tender, about 30-40 minutes.
  • Optional Heat: If you like your Brunswick stew with a bit of a kick, add the optional hot sauce.
  • Serve and Enjoy: Once everything is tender and flavorful, your Old Hickory House Brunswick Stew recipe is now ready to be relished.

Notes

  • Meat Choices: You can also use other meats like beef.
  • Fresh Veggies: Using fresh vegetables can significantly enhance the flavor.
  • Stew Consistency: Should you find the consistency of the stew too dense, feel free to dilute it by incorporating additional chicken broth until it suits your taste.
  • Season to Taste: Make sure to taste and adjust the seasoning to your preference.
  • Make Ahead: This rendition of the Old Hickory House Brunswick Stew Recipe is excellent for planning meals ahead of time and holds up well when frozen.
