Equipment

  • Large mixing bowl
  • Sharp knife
  • Measuring spoons and cups
  • Zip-lock bag or marinating container
  • Grill or stovetop pan
  • Meat thermometer

Ingredients

  • Boneless, skinless chicken breasts 4
  • Orange juice ¼ cup
  • Lime juice ¼ cup
  • Pineapple juice ¼ cup
  • Garlic cloves, minced 2
  • Ground cumin 1 teaspoon
  • Dried oregano 1 teaspoon
  • Turmeric ½ teaspoon
  • Salt and pepper to taste
  • Olive oil or vegetable oil 2 tablespoons
  • Fresh cilantro (optional) for garnish

Instructions

  • Begin by mixing the orange, lime, and pineapple juices in a large bowl.
  • Add in the minced garlic, cumin, oregano, turmeric, salt, and pepper. Whisk until well combined.
  • Place the chicken breasts in a zip-lock bag or marinating container. Pour the marinade over the chicken.
  • Ensure the chicken is well-coated, then refrigerate for at least 3 hours, or overnight for best results.
  • Heat your grill or stovetop pan over medium-high heat. Brush with oil.
  • Remove the chicken from the marinade, letting the excess drip off.
  • Grill each side for 6-7 minutes or until fully cooked (internal temperature should reach 165°F or 74°C).
  • Serve piping hot and, if you fancy, sprinkle with fresh cilantro for an added burst of flavor.

Notes

  • Marinating overnight allows the flavors of our Pollo Tropical Chicken Recipe to deeply penetrate, resulting in richer tastes.
  • It's crucial to cook the chicken thoroughly, reaching the right internal heat, to ensure it's safe from any harmful pathogens.
  • Craving a deeper smoky undertone? Think about infusing the marinade with a hint of liquid smoke.
  • Pair the Pollo Tropical Chicken with a side of Caribbean-style rice or a fresh salad for a complete meal.
  • This versatile marinade isn't just for chicken; it pairs beautifully with other proteins and seafood.
