Ingredients
  

  • Ground beef 2 lbs
  • Sweet white corn 2 cans
  • Black beans 1 can
  • Pinto beans 1 can
  • Kidney beans 1 can
  • Rotel 1 can
  • Green chilis (chopped) 1 can
  • Ranch dressing mix 1 package
  • Taco seasoning 1 package
  • Water 2 cups
  • Cumin ½ teaspoon
  • Yellow onion (chopped) 1
  • Salt and pepper to taste

For Garnish:

  • Lime wedge
  • Avocado sliced
  • Shredded cheese

Instructions
 

  • Heat a large skillet over medium heat and add the ground beef, cumin, onion, salt, and pepper. Cook until the beef is browned and the onion is tender.
  • Once the ground beef is browned, carefully drain the excess grease from the skillet.
  • In a large pot on the stove, mix together the cooked ground beef, corn, beans, Rotel, chilis, water, and seasonings.
  • Bring the pot to a boil, then reduce the heat and let it simmer for 20 minutes, allowing the flavors to meld together.
  • Once the simmering is complete, it's time to serve and garnish each serving with a squeeze of fresh lime juice, a sprinkle of cheese, and a few slices of creamy avocado.
