Ingredients
  

  • Bulk pork sausage 1 pound
  • Shredded cheddar cheese 1 cup
  • Butter 1 tablespoon
  • Small onion (chopped) 1
  • Green pepper (chopped) ½
  • Large eggs (beaten) 6
  • Mushroom stems and pieces (drained) 1 can
  • Flour tortillas warmed (8 inches) 8
  • Salsa (optional)

Instructions
 

  • Start by browning the sausage in a spacious frying pan. Once cooked, remove it from the pan and set it aside, making sure to reserve 2 tablespoons of the drippings. With the same pan still on the heat, sauté the onion, green pepper, and mushrooms in the reserved drippings until they become tender.
  • Using a separate frying pan, melt the butter over medium-high heat. Crack the eggs into the pan and stir continuously until they're fully cooked and set.
  • Divide the sausage mixture evenly among the tortillas. Then, add the cooked eggs and cheese on top of the sausage mixture. Fold the bottom of the tortilla over the filling and roll it up tightly.
  • Optionally, you can serve the tortillas with some salsa on the side.
  • Enjoy your warm breakfast burrito straightaway!
