- Large onion (sliced) 1
- Beef shoulder roast or silver tip 5 pound
- Cloves garlic (crushed) 6
- Extra virgin olive oil 3 tablespoons
- Kosher salt 1 teaspoon
- Paprika 1 teaspoon
- Onion powder 1 teaspoon
- Cumin 1 teaspoon
- Red wine 1 cup
- Ketchup 1 cup
- Crushed black pepper to taste
Preheat your oven to 325°F.
In a bowl, mix olive oil, garlic, salt, pepper, paprika, onion powder, and cumin. Rub this mixture all over the roast.
Place the sliced onion in the bottom of the roasting pan. Put the seasoned roast on top.
Mix the red wine and ketchup together. Pour this mixture over the roast.
Cover the pan with foil and roast for about 3 hours or until the meat is tender.
Let it rest for 15 minutes before slicing.
