Ingredients
  

  • Large onion (sliced) 1
  • Beef shoulder roast or silver tip 5 pound
  • Cloves garlic (crushed) 6
  • Extra virgin olive oil 3 tablespoons
  • Kosher salt 1 teaspoon 
  • Paprika 1 teaspoon
  • Onion powder 1 teaspoon
  • Cumin 1 teaspoon
  • Red wine 1 cup
  • Ketchup 1 cup
  • Crushed black pepper to taste

Instructions
 

  • Preheat your oven to 325°F.
  • In a bowl, mix olive oil, garlic, salt, pepper, paprika, onion powder, and cumin. Rub this mixture all over the roast.
  • Place the sliced onion in the bottom of the roasting pan. Put the seasoned roast on top.
  • Mix the red wine and ketchup together. Pour this mixture over the roast.
  • Cover the pan with foil and roast for about 3 hours or until the meat is tender.
  • Let it rest for 15 minutes before slicing.

  • Slicing the onion thinly helps it to caramelize better.
  • Ensure the roast is at room temperature before cooking for even roasting.
  • Baste the roast periodically with the pan juices for extra flavor.
  • Letting the meat rest is crucial for retaining its juices.
