- Boneless chicken breast (skinless) 1 lb
- Trader Joe’s yellow curry sauce 11 oz
- Bell peppers 1 ½ cups
- Jasmine rice 1 cup
- Carrot peeled and cut (into ¼-inch slices) 1 cup
- Potatoes peeled and cut (into ¼-inch slices) 1 cup
- Onion cut (into ¼-inch slices) ½ cup
- Vegetable oil 1 tablespoon
- Bunch cilantro ½
Set up your rice cooker or instant pot and start cooking the jasmine rice to complement your dish.
Place a medium-large skillet over medium heat and add 1 tablespoon of vegetable oil. Heat the oil until the pan becomes hot.
Add the chicken breast to the skillet and cook it for 5-6 minutes until it is cooked through and there is no pink left. Set the cooked chicken aside for later use.
Heat the skillet over medium heat and add 1 tablespoon of vegetable oil. Wait until the pan is hot before proceeding.
Place the vegetables, with the exception of the cilantro, into the skillet and sauté them over medium heat for approximately 3 minutes until they are cooked through.
Combine the cooked chicken and Trader Joe's yellow curry sauce with the sautéed vegetables in the skillet, and then reduce the heat to low.
Cover the skillet with a lid and let the curry simmer for 5-10 minutes, making sure to stir it occasionally.
Serve the flavorful curry with a side of rice, and don't forget to sprinkle some fresh cilantro on top for added freshness.
