Ingredients
  

  • Ground chicken 1 lb
  • Head of iceberg lettuce, leaves separated 1
  • Red bell pepper, finely diced 1
  • Carrot, julienned 1
  • Green onions, thinly sliced 4
  • Garlic cloves, minced 2
  • Ginger, minced 1 tablespoon
  • Soy sauce, or tamari for gluten-free 2 tablespoons
  • Hoisin sauce 1 tablespoon
  • Sesame oil 1 teaspoon
  • Rice vinegar 1 tablespoon
  • Sriracha optional 1 teaspoon
  • Crushed peanuts optional ½ cup
  • Fresh cilantro for garnish

Instructions
 

  • Start by washing and drying all fresh produce. Mince the garlic and ginger, dice the bell pepper, julienne the carrot, and slice the green onions.
  • Heat a skillet over medium heat. Add the ground chicken and cook until it’s fully browned, breaking it up as it cooks.
  • Once the chicken is cooked, add the garlic and ginger. Stir frequently to prevent burning and cook until fragrant, about 2 minutes.
  • Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Stir well to coat the chicken. Add sriracha if using, adjusting to your preferred spice level.
  • Add the red bell pepper and carrot to the pan. Cook for another 2-3 minutes until just softened.
  • Spoon the chicken mixture into individual lettuce leaves. Garnish with green onions, crushed peanuts, and fresh cilantro.
