- Ground chicken 1 lb
- Head of iceberg lettuce, leaves separated 1
- Red bell pepper, finely diced 1
- Carrot, julienned 1
- Green onions, thinly sliced 4
- Garlic cloves, minced 2
- Ginger, minced 1 tablespoon
- Soy sauce, or tamari for gluten-free 2 tablespoons
- Hoisin sauce 1 tablespoon
- Sesame oil 1 teaspoon
- Rice vinegar 1 tablespoon
- Sriracha optional 1 teaspoon
- Crushed peanuts optional ½ cup
- Fresh cilantro for garnish
Start by washing and drying all fresh produce. Mince the garlic and ginger, dice the bell pepper, julienne the carrot, and slice the green onions.
Heat a skillet over medium heat. Add the ground chicken and cook until it’s fully browned, breaking it up as it cooks.
Once the chicken is cooked, add the garlic and ginger. Stir frequently to prevent burning and cook until fragrant, about 2 minutes.
Pour in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Stir well to coat the chicken. Add sriracha if using, adjusting to your preferred spice level.
Add the red bell pepper and carrot to the pan. Cook for another 2-3 minutes until just softened.
Spoon the chicken mixture into individual lettuce leaves. Garnish with green onions, crushed peanuts, and fresh cilantro.
